Why are their different ceiling heights in my house?

My house was built in 1989, it’s a single-story home with 1900 square feet.

In my home there are different ceiling heights: In the entry the ceiling is about 15 feet, in the living room the ceiling is vaulted from 9 ft. to 15 ft., in the dining room it’s flat and 12ft., in the kitchen and in all the bedrooms it’s 9ft. and in the hallway it it 12 ft. So what’s the deal with so many different heights? I love the way it looks, but I never see anyone else’s house like this, everyone that comes over adores the ceiling. wouldn’t this be a lot more work on the home builder’s part? So is your house like this, have you ever seen this before?

(BTW this is not a ‘rich’ house it’s just a regualr residential home.)
All the houses in my neighborhood seem to be this way too.

If shower walls will be custom floor to ceiling frameless glass, what material should be used for the ceiling?

We are building a new home (new construction) and are having the bath tub and shower removed from the master bath, to be replaced with a custom shower. The shower will be enclosed with a wall-to-wall, floor-to-ceiling frameless glass frame and door. The glass will be held up by a 12″ soffit coming down from the 8′ ceiling, and the interior shower ceiling will be 8′ in height. The builder has suggested that they are not planning to tile the ceiling, but that it will be a higher-quality type of drywall than usual. They said they are not planning to tile the ceiling in case there are any plumbing problems in the future (so it would be easier to get to the plumbing: one detail is that we will have a rain shower head coming from the ceiling in between two standard heads). I am concerned that the ceiling will peel and become damaged by condensation and steam…
